Almond Mushroom
Agaricus subrufescens
Agaricus subrufescens is a gourmet mushroom that requires hot temperatures (70-90°F / 21-32°C) to initiate fruiting. This terrestrial varietal grows better outdoors than in grow bags, and thrives alongside garden produce plants either in standard grow beds, greenhouses, or hoophouses. If growing outdoors, they do appreciate some shade and will do better if inoculated at the base of garden plants (leafier/taller plants are better; tomatoes, chard, zucchini, lettuces, etc other large leaved plants). Unlike many other gourmet mushrooms that are hardwood decomposers, these mushrooms prefer very well broken down plant material. As such, it makes a great recycling avenue for cultivators to use their spent blocks from grows that do use hardwood recipes, like Shiitake or Oyster mushrooms. Almond mushrooms can utilize the broken down blocks that have been exhausted by their hardwood decomposing relatives, especially if those blocks have been further composted in a pile.
At maturity, caps are 2-7 inches (5-18 cm), ranging from white to light gray, sometimes with a slight hue of dull red/brown, and with white interior flesh. The cap surface is velvety and smooth when young, giving way to mild squamous (scale-like) development with age. The flavor profile is generally nutty and somewhat sweet, with a slight almond-like fragrance. This gourmet varietal lends itself very well to being baked, grilled, broiled, stuffed, sauteed, fried, used as a pizza topper, or used in pasta sauce. Bon appétit!

Nameko
Pholiota microspora
Nameko is a small, prolific amber-brown mushroom which grows in compact clusters on the stumps and fallen trunks of hardwood trees. It is native to Asia, found primarily in Chinese, Japanese, and Taiwanese forests. Its originates from the Japanese word “Numerikko”; “Numeri-” meaning slimy, or slime, and “-ko” from “Kinoko” meaning mushroom. Over time this was shortened to Nameko and which has remained its most recognizable name.
Nameko mushrooms have a sweet, candy-like aroma reminiscent of butterscotch and have a distinctive mouthfeel; firm yet slippery and gelatinous. Their flavor profile is earthy, woody, and nutty, with a subtle fruity undertone. Nameko’s gelatinous coating CAN'T be eaten raw and must be cooked before consumption; if not the gelatinous coating can cause extreme indigestion. Most forms of cooking will render them safe to eat and additionally, when used in soups or sauces, the slime acts as a great thickening agent. Nameko’s best known applications are in miso soup and nabemono (a one-pot style dish), however they are a versatile mushroom that lends itself well to a variety of dishes. Whole, unwashed Nameko mushrooms will keep for 2 to 3 days after harvest when stored in a sealed container in the refrigerator. Their shorter than average shelf life is due to the gelatinous covering’s tendency to mold quickly. It is recommended to use the mushrooms as soon as possible after harvest for the best quality and flavor.
Nameko lends itself well to commercial bag cultivation methods and will happily grow in a standard hardwood substrate recipe. It is also a great candidate for outdoor inoculated log grows, and while generally not picky about what specific type of wood, it is reported that it grows best from fresh cut Cherry, Sweet Gum, Sugar Maple and Ironwood logs.
